Greek Salad

I forgot how much I love a good Greek salad! It’s simple, healthy and so delicious. Did you know a traditional Greek salad (horiatiki) doesn’t have lettuce??It’s just tomatoes, bell peppers, cucumbers, red onion, sheep’s milk feta and Kalamata olives with a simple red wine vinaigrette and dried oregano.

If you want to be traditional, don’t marinate the feta, put a big slice on top of the salad. Sometimes I cube the feta and give it a quick marinade for extra flavor but I love the traditional style as well. As for the tomatoes, use whichever have the most flavor! Larger tomatoes cut to bite sized pieces or cherry tomatoes cut in half

Greek Salad

Ingredients 

• 3 Persian cucumbers or 1 English cucumber 
• 2 bell peppers (green is traditional) 
• 1/4 red onion, sliced thinly 
• 1/2 pint cherry tomatoes or 4 medium tomatoes 
•  1 cup Kalamata olives 
• 6 oz. feta block* (not crumbled) 
• Dried oregano
• For vinaigrette:
• 2 Tbs red wine vinegar
• 1/2 tsp dried oregano 
• 1/4 tsp salt 
• 1/4 tsp pepper 
• 3 Tbs olive oil 
• 1 clove garlic, minced

Method

Peel strips off cucumber so some skin remains and slice into 1/4” slices. 

Cut peppers in half, remove seeds and slice thinly. 

Cut tomatoes into large chunks (or halve cherry tomatoes.) 

Place cucumbers, bell peppers, red onion, tomatoes and olives in a large bowl. 

Whisk all vinaigrette ingredients together. 

Toss veggies gently with vinaigrette. 

Place feta on top -one big slice, or marinated cubes. Add extra oregano if desired

*to marinate feta, gently toss cubes with 2 tsp dried oregano, 1 clove minced garlic clove, zest from half a lemon, a few cracks pepper and 1 Tbs olive oil.
