Antipasti Chopped Salad


🇮🇹Ever just want salad for dinner? Enter my favorite antipasti chopped salad. The pictures salad is lacking olives because I was all out - I highly recommend customizing it to you and your fam’s taste! Make sure everything is chopped into small pieces. For the mozzarella, I look for bocconcini (mouth sized), ciliegine (cherry sized) or perlini (pearl sized) mozzarella. Or you can use cubed provolone.⁣
1 head iceberg lettuce, chopped⁣
1/2 head radicchio, chopped⁣⁣
1 pint cherry tomatoes, halved⁣
1 can of chickpeas, drained and rinsed⁣
1/4 cup sliced peperoncini ⁣
1/4 red onion, thinly sliced into half moons⁣
1 pint fresh mozzarella balls (smallest size)⁣
6 oz. Italian salami (Genoa, soppressata, etc.)⁣
1 cup olives of choice

Italian red wine vinaigrette:⁣⁣
⁣⁣
3 Tbs red wine vinegar ⁣⁣
1 Tbs Dijon ⁣⁣
1 clove minced or microplaned garlic⁣
Splash peperoncini juice (optional)⁣
1/2 tsp dried oregano ⁣
1/2 cup olive oil⁣⁣
1/2 tsp salt⁣⁣
1/4 tsp pepper ⁣⁣
⁣⁣
Shake it all in a jar. That’s it.⁣ use enough vinaigrette to lightly coat lettuce and all your salad ingredients. The remaining salad dressing will keep in a jar for a week.
