🇮🇹Ever just want salad for dinner? Enter my favorite antipasti chopped salad. The pictures salad is lacking olives because I was all out - I highly recommend customizing it to you and your fam’s taste! Make sure everything is chopped into small pieces. For the mozzarella, I look for bocconcini (mouth sized), ciliegine (cherry sized) or perlini (pearl sized) mozzarella. Or you can use cubed provolone.
1 head iceberg lettuce, chopped
1/2 head radicchio, chopped
1 pint cherry tomatoes, halved
1 can of chickpeas, drained and rinsed
1/4 cup sliced peperoncini
1/4 red onion, thinly sliced into half moons
1 pint fresh mozzarella balls (smallest size)
6 oz. Italian salami (Genoa, soppressata, etc.)
1 cup olives of choice
Italian red wine vinaigrette:
3 Tbs red wine vinegar
1 Tbs Dijon
1 clove minced or microplaned garlic
Splash peperoncini juice (optional)
1/2 tsp dried oregano
1/2 cup olive oil
1/2 tsp salt
1/4 tsp pepper
Shake it all in a jar. That’s it. use enough vinaigrette to lightly coat lettuce and all your salad ingredients. The remaining salad dressing will keep in a jar for a week.
