This is a salad we make in our house with odds and ends from the refrigerator and fruit bowl. If you make it a habit to buy red cabbage with your groceries, you're 10-15 minutes away from an easy and filling lunch salad. I call it "LA Chopped Salad" because I always put avocado in it and it's obnoxiously bright, cheerful and healthy ;) Add a protein or nuts to make it more substantial but it stands well on it's own, especially with the avocado.
There is no exact recipe. The base is chopped red cabbage. Half a head will make enough for 2-4 people as a main course, more if it's a side salad. Romaine, baby gem or arugula also work well. Assemble whatever veggies and fruit you have and chop everything into bite size pieces. This was a cucumber, 1/2 a red pepper, 1/2 a yellow pepper, 2 plums and an avocado. If you have fresh herbs, chop up a handful and toss that in. Basil, cilantro, mint, dill, chives, tarragon or a combination are all great.
In a little bowl or jar make a dressing by whisking the juice of one lemon or lime (or 1 Tbs of your favorite vinegar) with 1 tsp Dijon mustard (I used a grainy one, which gives a nice mustard pop) and 3 T olive oil. ** Add a good pinch of salt and pepper. Toss and enjoy.
*other vegetables and fruits that work well in this salad are: corn (raw or cooked), radish, carrots, cherry tomatoes, cauliflower, celery, fennel, green onion, any stone fruit, apples, citrus segments, grapes, persimmon, papaya, any kind of melon. You can get pretty creative with this and adjust seasonally.
**If you are using a whole head of cabbage, double the vinaigrette!
