I'm obsessed with this easy, bright, Thai dressed, no mayo or oil slaw.
Ingredients:
1/2 head red cabbage, sliced thinly with a knife or mandolin
1 carrot, peeled and julienned (about 1/2 c)
handful chopped cilantro and or mint
1/2 c dry roasted, salted peanuts
2 Tbs fish sauce
2 Tbs lime juice
1-2 tsp agave or sugar
1 tsp minced garlic
1 tsp minced ginger
Method:
Mix cabbage, carrot, cilantro and mint (if using) with peanuts in a large bowl.
In a jar shake fish sauce, lime juice, 1 Tbs water, agave or sugar and minced ginger and garlic.
Toss everything together. Serve promptly as salad will wilt after a while.
