Weeknight Thai Steak Salad


I love this steak salad when it's hot out and I don't want to spend too much time in the kitchen. If you buy pre washed lettuce mix and shredded cabbage, you can have dinner ready in under 30 minutes. The only thing you need to cook is the steak and snap peas (and maybe some rice to round out the meal.) 

Ingredients:


Steak:
Marinate steak with minced garlic, ginger and soy sauce for ten minutes and up to overnight. 
Toss salad with dressing (you might not need all of it depending on how much salad you’re making) and place sliced meat on top. Garnish with more herbs and chopped peanuts if you like!

1 lb steak (flank, skirt and sirloin work well but you can use whatever you like)
1 inch ginger, grated or minced
3 cloves garlic, grated or minced

Dressing:
2 Tbs soy sauce
2 Tbs lime juice
1 Tbs fish sauce or soy sauce
1 Tbs rice vinegar
1 tsp sugar
1 clove minced garlic
2 Tbs vegetable or olive oil
minced serrano, Thai or Fresno chili if you like it spicy

Salad:
8 oz (about 2 cups) snap peas
4-6 cups mixed lettuce (arugula, mesculin or spinach),
1 c bean sprouts
1 c shredded cabbage
1-2 cups chopped veggies (bell peppers, carrots, radish, whatever you like!)
handfull of fresh herbs such as mint and cilantro
handful peanuts (optional)

RECIPE: 


Make dressing by combining with lime juice, fish sauce (substitute with soy sauce and omit sugar if fish sauce isn’t your thing), rice vinegar, sugar, minced garlic and olive or vegetable oil. If you like it spicy add a little minced serrano, fresno or Thai chili to taste.

Boil snap peas one minute and then put them in ice water to stop cooking and this will also keep them bright green. Once cool, drain and pat dry.

Add lettuce, bean sprouts, chopped cabbage, cooked snap peas and herbs to a salad bowl. What is nice about this salad is you can use whatever greens, herbs and veggies you like and the amounts don’t really matter. 

Grill steak or sear it in a very hot pan with a little oil until desired doneness. Time will vary depending on thickness of steak. Let meat rest about ten minutes and then slice.
