I absolutely LOVE these vegan, protein energy bites. We keep them in the freezer for quick, healthy snacks and you can adapt them to your own taste with different add-ins and nut butters, although I’d stick with cashews as the base. I like using roasted cashews but you can do raw. Leave them plain or roll them in coconut, hemp seeds, cocoa powder, etc.. You can even dip them in melted chocolate and the refrigerate to make them like a chocolate candy treat.
1 cup pitted medjool dates
1 cup cashews or almonds
1 cup shredded unsweetened coconut
1/4-1/2 cup nut butter
1 tsp vanilla
0-1 tsp salt
Blend dates in food processor first, then add remaining ingredients. If you’re using salted nuts, you may not need to add any salt so taste and adjust as you blend. Start with 1/4 cup nut butter and add more if needed. Once nuts are ground and mixture starts to come together in a ball it’s finished. Remove dough to a mixing bowl and use your hands to shape it into 16 balls. Coat with coconut, hemp seeds, etc if desired or keep plain. Store in an airtight container in the freezer up to 3 months.
