This delicious bright green pea and mint soup is the perfect way to welcome Spring! It's so simple to make, even a beginner can do it. Plus, it's a great way to get your daily dose of vegetables. Give it a try!
Ingredients:
1 Tbs olive oil
1 onion, chopped
1 stalk celery, chopped
1 garlic clove, minced
1 bag (16 ounces) frozen peas
4 cups vegetable or chicken stock
A big handful of mint (washed)
Salt and pepper to taste
Instructions:
- Heat the olive oil in a medium pot over medium heat. Add the onion and celery and cook, stirring occasionally, until softened, about 5 minutes.
- Add the garlic and cook for 1 minute more.
- Add the stock, peas, salt, and pepper. Bring to a simmer, then reduce heat and simmer for 10 minutes, or until the peas are tender.
- Add the mint and use an immersion blender or regular blender to puree the soup until smooth.
- Chill the soup in the refrigerator for at least 1 hour, or until it is cold.
- Serve the soup hot or cold.
- Garnish ideas: cream, coconut cream, croutons, slice of toasted baguette, bacon, peas shoots, more peas, olive oil, chili oil, whatever you desire!
Tips:
- To keep the soup bright green, chill it quickly after pureeing. You can do this by placing the soup in an ice bath and then in the refrigerator for at least 1 hour.
- If you don't have an immersion blender, you can puree the soup in a regular blender in batches. Be careful when blending hot liquids, as they can splatter.
- Add a splash of cream or half n half to the soup to make it richer
