Pea Soup with Mint


This delicious bright green pea and mint soup is the perfect way to welcome Spring! It's so simple to make, even a beginner can do it. Plus, it's a great way to get your daily dose of vegetables. Give it a try!


Ingredients:


1 Tbs olive oil

1 onion, chopped

1 stalk celery, chopped

1 garlic clove, minced

1 bag (16 ounces) frozen peas

4 cups vegetable or chicken stock

A big handful of mint (washed)

Salt and pepper to taste


Instructions:

  1. Heat the olive oil in a medium pot over medium heat. Add the onion and celery and cook, stirring occasionally, until softened, about 5 minutes.
  2. Add the garlic and cook for 1 minute more.
  3. Add the stock, peas, salt, and pepper. Bring to a simmer, then reduce heat and simmer for 10 minutes, or until the peas are tender.
  4. Add the mint and use an immersion blender or regular blender to puree the soup until smooth.
  5. Chill the soup in the refrigerator for at least 1 hour, or until it is cold.
  6. Serve the soup hot or cold.
  7. Garnish ideas: cream, coconut cream, croutons, slice of toasted baguette, bacon, peas shoots, more peas, olive oil, chili oil, whatever you desire!

Tips:

  • To keep the soup bright green, chill it quickly after pureeing. You can do this by placing the soup in an ice bath and then in the refrigerator for at least 1 hour.
  • If you don't have an immersion blender, you can puree the soup in a regular blender in batches. Be careful when blending hot liquids, as they can splatter.
  • Add a splash of cream or half n half to the soup to make it richer
